One of the joys of Spring . . .

Time to make rhubarb sauce! Use on cereal, yogurt or toast, for example. Add to orange marmalade.

Harvest the stalks when they pull easily from the root by twisting the stalk. Cut off the leaf and the end that was attached to the root.

To make Rhubarb Sauce

Cut into 2-3" pieces. Heat in a covered stainless steel or enamel coated pot on low. Watch carefully until the fibers have softened. Put in sterile canning jars or freezer safe containers. That's it!

I like to add the sauce to my orange & ginger marmalade.

In the spirit of recycling - make a plant spray from the leaves.
